Moët Impérial is the House's iconic champagne. Created in 1869, it embodies Moët & Chandon's unique style, a style distinguished by its bright fruitiness, its seductive palate and its elegant maturity. Golden straw yellow color with green highlights. The vibrant intensity of green apple and citrus fruit the freshness of mineral nuances and white flowers the elegance of blond notes (brioche, cereal, fresh nuts). The delicious sumptuousness of white-fleshed fruits (pear, peach, apple) the alluring caress of fine bubbles the soft vivacity of citrus fruit and nuances of gooseberry. Moët Impérial can be served throughout the meal, from aperitif to dessert and pairs perfectly with sushi, scallops, oysters, white fish, white meats (such as roasted free range chicken au jus with fines herbes), and white fruits (such as a white peach tart served with a light, white chocolate cream).

An elegant Champagne, with a finely detailed mousse and a bright streak of lemon peellaced acidity carrying well-meshed flavors of patisserie apple and pear, biscuit, smoke and candied ginger. An aperitif style, showing good focus and length. Pinot Noir, Pinot Meunier and Chardonnay. Drink now.

(roughly 50% Pinot Noir, 35% Pinot Meunier and 15% Chardonnay; 9 g/l dosage; LAIBG): Light, bright yellow. Musky pear and toasty lees on the nose and in the mouth. Fleshy and open-knit, with a hint of bitter lemon pith adding back-end cut. Finishes on a gently smoky note, with very good cling and focus and a hint of bitter quinine. This must be the best example of this bottling that I've had in years, if not decades. In the past the Imperial Brut received a dosage of 12 g/l, but no more; in fact, there's talk that in the near future it may be dropped down as far as 7 g/l.

A blend of more than 100 different wines, this nonvintage cuvée is the Moët et Chandon signature. It is full, showing some attractive bottle aging and ripe with creamed-apple fruits. A sense of dryness comes from the acidity that gives the aftertaste a lift. Drink now.

The latest release of the NV Brut Imperial is showing quite well, exhibiting an attractive bouquet of smoky pears, warm bread and dried white flowers. On the palate, the wine is medium to full-bodied, with a youthfully frothy mousse, ripe acids and a nicely balanced but somewhat fleeting finish. Given the sheer quantities produced, it's a very impressive effort.
